• Lactones add a woody character
• Aldehydes add some vanilla notes and sometimes almond aromas
• Esters – add the fruity flavours and aromas.
• Phenol – these compounds add the smoky flavours, most closely associated with Scottish whiskey – but some Irish whiskeys have some- most notably Connemara 12 year old.
