Jameson Caskmates came about following a conversation between Dave Quinn, Midleton’s head of whiskey science, and Shane Long, the head brewer at Cork’s Franciscan Well Brewery. Shane was looking to try something different with his new stout recipe and he asked Dave if he could use some of his old Jameson oak barrels to mature the stout in.
The barrel ageing resulted in a beautiful stout that had received a little whiskey love. The same barrels were then returned to Midleton and refilled with 60% abv whiskey, then matured for further 6 months. This extra finishing period added notes of smooth cocoa, oak, and butterscotch – to name a few – and embellished the mouth-feel of the standard Jameson. A cross pollination of flavours that has been bottled and released to the world.
